2008 IFT Show Offers Tasty New Prototype Products
IFT exhibitors cooked up many prototype products worthy of grocery and foodservice.

We didn’t believe our mothers when they told us that beauty was skin deep, but evidence is growing that ingested nutrients promote skin health. So beauty from within was the theme at DSM’s booth. I felt beautiful each day after consuming ProBella Strawberry Yogurt for Younger Looking Skin, made with DSM Premix XR18240 (contains DSM’s Resvida Resveratrol, Teavigo EGCG, All-Q coenzyme Q10, FloraGlo lutein, Otisharp zeaxanthin, vitamin E and vitamin C. Cosmeceuticals and beauty products are growing by leaps and bounds abroad; aging American baby boomers can’t wait much longer. Even the name of the product is marketing-ready.
The Almond Board of California, Modesto, Calif., captured the adventurous flavor combinations that interest its foodie female target customer with Curry Chocolate Almond Bar (made with almond flour). On the other hand, Almond Cherry Energy Bars (with slivered almonds) exemplify the type of nutritious snack its on-the-go male consumer audience likes to eat. Both were custom-baked by Sucre, a local bakery, using Almond Board recipes. There’s been growing use of almonds in the energy bar category.
Fortitech, Schenectady, N.Y., treated attendees to Fortitech Rocks, a video of energizing music to get the heart pumping. Also great for the heart (and soul) were Heart and Diabetic Healthy Bars, natural, low-sodium, non-trans fat bars to help lower blood pressure and the risk of heart disease. The heart bars contained L-carnitine, L-arginine and zinc, which can help reduce homocysteine levels. The diabetic bars contained fiber, zinc, copper and selenium to help control blood sugar levels.
Bell Flavors & Fragrances, Northbrook, Ill., kept salsa lovers coming back for more Southwest flavors with four delicious choices. Our knockout favorite is Blueberry Bacon Salsa, made with smoky Bacon and Blueberry flavors, blueberry puree, tomatoes and tomato sauce, red pepper, onion, jalapeno peppers and honey. Yummy!
Thinking outside the box, Kerry Ingredients & Flavors, Beloit, Wis., showcased a lollipop made out of cheesecake, an Asian lobster broth shooter and chorizo-queso savory chip — all of which were great fun. Consumer demand for microwavable upscale hand-held meals with clean label ingredients is at an all-time high, so Kerry served up a tasty ham, salami and roasted vegetable panini on sourdough bread slathered with artichoke spread — built with parmesan seasoning, Kerry Etra parm/romano cheese system, savory flavors and Dura Fresh natural shelf-life extender. Incidentally, Kerry’s new moniker (it was formerly Mastertaste) demonstrates the integration of the company’s flavors and ingredients technology and application expertise.
Starting the day with a great breakfast casserole needn’t only be a weekend choice. Dairy Management Inc., Rosemont, Ill., developed a scrumptious, Hash Brown Casserole with Aged Cheddar Cheese which could be a great microwave choice. Come to think of it, the casserole would be good for dinner too. If watching calories is a must, you have the option of Peach-Flavored Drink with Whey Protein and Fiber to help promote satiety.
