The Panel on Food Additives of the European Food Safety Authority (EFSA) has given a positive scientific opinion on the safety and bioavailability of selenium yeast for use in foods, food supplements and foods for particular nutritional use. The health-promoting effects ascribed to selenium have been demonstrated by numerous clinical studies. These effects include support of the immune system, protection against oxidative damage and defense against viruses. Not only did the EFSA deem selenium yeast completely safe, the panel also looked at the bioavailability and metabolism of the mineral source, and identified the high level of selenomethionine (60-85 percent of the Se content) to be responsible for the superior bioavailability of the compound. The panel also concluded that yeast with high levels of organically bound selenium, such as Lallemand Health Ingredients’ Lalmin Selenium Yeast, is up to twice as bioavailable than inorganic forms of selenium like selenite or selenate. Furthermore simple blends of yeast and inorganic forms of selenium show no signs of improved bioavailability.
