What are the optimal construction conditions for coffee warehousing? What are the conditions when founding a new food plant according to ISO 22000 requirements?

Air and moisture are coffee’s principal enemies. Key elements to consider when storing coffee are to keep the coffee beans away from light, moisture, extreme temperatures (either too hot or too cold) and strong odors, since coffee will attract and absorb foreign odors. Coffee should be warehoused in facilities that are 100 percent climate controlled and offer 24/7 security. The optimal temperature to store coffee will vary by bean type but will usually range from 65-70 °F.

ISO 22000 is a standard developed by the International Organization for Standardization dealing with food safety. This is a general derivative of ISO 9000. The ISO 22000 international standard specifies the requirements for a food safety management system that involves the following elements: interactive communication, system management, prerequisite programs and HACCP (hazards analysis and critical control points) principles.
