Use of tocopherols in a dog biscotti formulation

Q: We are baking dog biscotti and want to use tocopherols as preservatives. I need to know how much to use per recipe and where to buy them. I have searched and searched and cannot find the information. Any help is much appreciated.

A: Cheryl Baldwin of Kraft Foods responds:

Mixed tocopherols are recommended. Usage depends on the amount and type of fat/oil in your product that you need to stabilize. Typical levels include 0.02%-0.05%.

Your tocopherol supplier may be able to provide additional assistance. If you do not have a tocopherol supplier, DSM, BASF and Fortitech are among the companies you may want to contact.
