Muufri is a six-month-old Silicon Valley startup using using cow's DNA and yeast to produce a milk protein-containing alternative beverage that could justifiably be called nondairy.
Profiled in the online technology report Gizmag, the company's founders are aiming the product at vegans who miss the taste and benefits of real milk. But the story also notes the company's use of bioengineering the yeast base for the fermentation process.
Principals Ryan Pandya and Perumal Gandhi say Muufri (pronounced “moo-free”) also appeals to those concerned with sustainability, feeding a growing world population, inhumane treatment of cattle and the greenhouse gas emissions from cows.
