Grilling may not be what you think. While many people consider grilling a talent and matter of technique, the chemistry behind the act may prove otherwise.

These two videos explore the concept and action of grilling and barbecuing, and why cooking meat in those ways is so delectable. As they explain, the critical aspect of grilling is the presence of the element carbon. Carbon is manifested in the charcoal used to smoke the meat.
