Traditional Japanese Breadcrumbs Go West
Hydroblend Inc., Nampa, Idaho, and Prestige Panko Inc., Lethbridge, Alberta, are joint-venturing on the first North American production and distribution of Nama Panko, a traditional Japanese fresh breadcrumb. Popular in Japan, where the technology originated, panko is also favored by a number of trendy chefs in this country. Through a specially designed engineering process, Nama Panko creates a harmony between the breading and substrate. Texture is lighter and crispier, and the crumbs have a visually pleasing light golden color. Variations include fresh, semi-dry and dry formats.
