TIC Gums rises to bakery product needs with its TIC Pretested Ticaloid Lite, a water-soluble gum system designed to restore loaf volume, enhance grain appearance and improve the eating quality of high-fiber breads and rolls.

Ticaloid Lite is film former that works in conjunction with gluten and starch to restore any lost volume due to high concentrations of insoluble dietary fiber. It can be incorporated into a variety of specialty baked goods, including high-fiber breads, low-fat breads, waffles and bagels. Usage level is typically 1 to 2 percent, based on flour levels and depending on the level of gluten.
