Traditionally, processors seeking a grilled appearance were forced to sear the surface of their product with a heated press or roller. Specialized browning agents can, however, be utilized to create “grill marks” through the normal cooking process.
Carbonyls within the browning agents interact with proteins on the product surface to create varying degrees of browning. By applying browning agents such as RA03036, processors can create a golden-brown, lightly seared grill mark. RA97051 may be used to impart more of a charred appearance or black grill line.
