Taking beneficial bacteria beyond yogurt is now possible with Chr. Hansen’s “Direct, Liquid Inoculation” system that allows processors to add the probiotic bacteria directly to the finished food product. Good candidates are chilled beverages, such as orange juice and milk.
In a standard production run, the heat treatment of the beverage would kill the live, probiotic bacteria. Using the Direct, Liquid Inoculation solution, healthy bacteria can be added to the milk or juice in a closed, clean system. This makes it possible to produce safe, probiotic beverages in a flexible manner using existing equipment. The system was developed by Chr. Hansen and Tetra Pak in close cooperation, utilizing Tetra Pak‘s aseptic dosing system, “Flex Dos.”
