Gum system helps bakeries create icings and glazes
No matter how delicious a fresh bakery item may be, it’s often the icing or glaze that catches a consumer’s eye — or turns them away. Pretested Stabilizer Icing is a gum system specially designed to help bakeries create icings and glazes that are effective, consistent and palate-pleasing. Comprised of a blend of hydrocolloids, it imparts properties key to stable icings and glazes such as emulsification, aeration and water binding. The cold water soluble powder emulsifies fat in the icing and stabilizes foam-like textures and is also effective in preventing sugar “blooms” that can occur in some products.
