Soda increases airiness, moistness and flavor.
Phoenix, Ariz.-based Cafe Valley Bakery,  a leading bakery for cakes, muffins, croissants and more with over 52,000 distribution locations worldwide, introduces its new 7UP Cake at participating grocery chains throughout the U.S.The Café Valley Bakery 7UP Cake is the result of a license agreement with Plano, Texas-based Dr Pepper Snapple Group for the 7UP, Mott's and other key brands, aimed at adding unique flavor profiles to the company's high quality baked goods. The licensing agreement begins with the launch of the Café Valley 7UP Cake and will include Mott's Mini Muffins made with applesauce; A&W Root Beer Float Cake; and other co-branded baked goods."Our Café Valley Bakery 7UP Cake mixes in the nostalgic flavor of 7UP, popular throughout the U.S. since the early 1950s, with our remarkably moist recipe, for a taste families will continue to enjoy for generations to come," says Café Valley President and CEO, Ron Ogan. "We expect the Café Valley 7UP Cake to be one of our top selling flavors of rich, moist cream cakes." Enterprising homemakers got a kick out of soda pop as a culinary ingredient throughout the U.S. and began using sodas like 7UP in cake batter in the 1940s and 1950s after World War II. The soda increased the airiness, moistness and flavor of the cake and resulted in a delicious cake with a moist crumb and a balance of citrus flavor and sweetness. The 7UP cake became increasingly popular in the 1950s. A cookbook published by The Seven-Up Co. in 1957 explained: "Make a cake with the contents of a packaged mix, using 7UP instead of the liquid in the recipe. You'll be amazed at how light and airy your cake is."
