Kemin BactoCease NV Helps Processors Develop Safe, Clean-Label Meat Products

Kemin has introduced BactoCease NV, a label-friendly ingredient for the intervention of Listeria monocytogenes in meat and poultry processing facilities. This is the latest addition to the Kemin food safety platform of label-friendly and synthetic ingredients designed to increase the safety of meat and poultry products.

BactoCease NV is a buffered, vinegar-based ingredient for the intervention of Listeria monocytogenes and other foodborne pathogens in processed meat and poultry as well as some fresh meat applications, helping manufacturers develop safe, clean-label food products.

The entire BactoCease line of ingredients, BactoCease and now BactoCease NV, are applied at lower application rates compared to traditional lactates, which could decrease ingredient cost per pound of meat as well as contribute less sodium as a result of lower application rates in the finished meat product.
