Hatch Valley roasted chiles are sourced from the farmlands of Hatch Valley in New Mexico to add heat and texture to sauces, salsas, stews, soups and more. The chiles are acidified, pasteurized and packaged while still hot to retain flavor. They are then cooled as quickly as possible to provide a firm-textured, commercially sterile, finished product. Available in 55-gal. bags packed in plastic drums, the chile product can be stored in room temperature in a dry area for up to two years.
