Comax Flavors Reveals Its 2013 Flavor Trend Predictions

Flavor manufacturer notes 'consumers want their flavors dialed up' as part of its 2013 trend report.
Comax Flavors has revealed its flavor predictions for 2013. The predictions are based on insights from the company's Culinary Trends Exchange and reflect food and beverage trends that will emerge on store shelves, restaurant menus and kitchen tables in 2013. According to the company, "the most telling trend is toward intensity and experimentation, boldness and clout." This translates into unlikely combinations that can deliver enhanced mouthfeel and flavor with higher impact. Having assessed consumer shifts and trends, Comax Flavors developed a list that fits with in three categories with proprietary names: Herb Appeal, Duets, and A Smooth Finish.Herb Appeal uses herbs with fruits to give a sweet, punchy flavor lift. The category is composed of the harmony of sweet and spicy and includes flavors such as:
  • Peach Basil Black Tea
  • Peppered Apple Bacon
  • Chili Ginger Lime
  • Cardamom Pear Berry
Duets are fusions of flavors from different lands and generations. Combining warmth and sweetness, this group includes flavors such as:
  • Butterscotch Coffee Crunch
  • Maple Bitters
  • Dolce de Leche Buttered Rum
  • Flan de Nuez
Smooth Finish flavors are those that add a bit of sweetness while maintaining a pleasant mouthfeel. The flavors in this group include:
  • Pistachio Almond Cream
  • Pink Cherry Marshmallow
  • Black Russian Cappuccino
  • Dark Chocolate Bourbon Truffle
