Naturally smoked sea salts in novel flavors

After a more than$2 million investment and years of research and development, the vendor debuts a line of all-natural smoked sea salts. Perfect Smoke Technology uses real wood, hand-selected for superior flavor and aroma profiles, premium salts harvested from the world’s cleanest oceans and proprietary ultra-clean cold smoking techniques to produce the ingredients – which have both consumer and processor applications. There is nothing artificial; the company doesn’t use liquid smoke or other chemicals, nor inexpensive and inferior materials such as bark, chips, pellets or sawdust. Flavors from the east

The East Asian Creations Collection is a new line of craveable flavors, each inspired by popular East Asian dishes. The four seasonings allow consumers to experience the flavors of East Asian cuisine without leaving the comfort of their kitchen. The four seasoning blends and base are: Taiwanese Fried Chicken Seasoning, Sichuan Beef Hot Pot Base, Soba Noodle Salad Seasoning and Vegetarian Mushroom Dumpling Seasoning. They're suitable for proteins, soups, appetizers and sides. Almond protein powder

This almond protein powder is a suitable component of a protein ingredient blend and can be used in health and wellness nutraceutical products; protein-enhanced nutrition bars, smoothies and shakes; and snack and bakery applications. Within blends, almond protein can be used to dilute undesirable flavors resulting from other protein ingredients, such as “earthy” notes in pea protein and soy protein. Sweetener that blends flavor and functionality

IconiSweet blends four separate elements that often are used to replace natural sugar—allulose, erythritol, stevia and monk fruit—to create a single product that offers the advantages of each ingredient while eliminating their individual drawbacks. Off notes from stevia or monk fruit are mitigated by erythritol and allulose; erythritol drives down freezing depression; allulose increases frozen-dessert overrun and also offsets any cooling effect that erythritol might add to candy; and erythritol lowers water activity, extending the shelf life of baked goods, and also participates in the Maillard reaction, giving breads and cookies a golden hue. Complex, high-daidzein soy isoflavone complex

Organic SoyLife Complex is a soy ingredient sourced from a variety that is naturally rich in isoflavones. It is produced from the soy germ that sits at the heart of the soy bean, further enhancing the isoflavone concentration. It is standardized in isoflavones through natural selection and is high in concentrations of daidzein, a constituent in soy recognized for its powerful antioxidant and phytoestrogenic properties. The product uses non-GMO soybeans and is selected, purified and heat-treated to ensure stability of the active ingredients. It is vegan, kosher and halal. Frutarom Health

Clean label citrus dietary fiber

Nutrava Citrus Fiber is a sustainably sourced ingredient produced from intact citrus peels. The fiber can help manufacturers meet clean label requirements while achieving their products’ desired tastes and textures. Key applications include condiments, dressings, soups and fruit-flavored drinks. For example, the fiber can be used in vegan mayonnaise as an alternative to egg, gum stabilizers and starch, as well as in fruit-flavored drinks to create reduced-sugar beverages. CP Kelco

Clean label fat reducer

Delyte 12 has been formulated to replace the functional properties of fat, maintaining the texture, mouthfeel, flavor and quality of the final product. It is suitable for bakery products such as brownies and for cold-process dessert applications such as cheesecakes and frostings. In reducing fat content, the product reduces overall calories, too. In application, a 33% reduction in fat translates to approximately a 7.5% reduction in calories. Infant formula ingredients

Two products have been added to the Infat line. The original fat ingredient already contains approximately 40–45% sn-2 palmitate, enabling the formulas to provide many benefits of breast milk. Infat Pro offers higher levels of sn-2 palmitate—as much as 60%—allowing better absorption of calcium and fat. Infat MF is a special blend containing milk fat. Caramel flavoring collection

The Sweet on Caramel Collection offers six flavors that are available in natural, liquid, non-GMO and water-soluble formulas. They include traditional, with hints of butter and warm vanilla; honey caramel, in which floral, fruity and botanical honey is blended with sweet buttery caramel; espresso caramel, a robust roasted coffee flavor with a dollop of fresh cream that meets sweet buttery caramel; nut caramel, mildly roasted nutty nuances that harmonize with buttery brown caramel; rum caramel, buttery brown and infused with rum and fruity nuances; and savory caramel, augmented with mildly spicy umami and savory accents.
