Rubicon Bakers Acquires Lucky Spoon Bakery

Rubicon adds gluten-free sweet baked goods to its portfolio, entering that category of products for the first time.

Salt Lake City, Utah-based Lucky Spoon Bakery has been acquired by Rubicon Bakers, giving Rubicon its first entry into the gluten-free sweet baked goods category, according to a release from the company.

Lucky Spoon, which manufactures fresh cakes, cupcakes, cookies, brownies and more, was founded in 2010, and the company’s portfolio positioning adds a new dimension to Rubicon’s portfolio of clean-label, nut-free and vegan baked goods. Rubicon was founded in 1993 and employs people who have faced systemic barriers to employment, including housing insecurity, incarceration and substance-use disorders, in a stable, judgment-free environment, the company says.

Sebastian Siethoff, CEO of Rubicon, expressed the company’s excitement at adding a valuable product set to Rubicon’s portfolio. Pam Schulte, founder of Lucky Spoon, will join the Rubicon leadership team, the release noted. The Lucky Spoon brand joins Rubicon’s current Rubicon Bakers and Just Desserts brands in the portfolio.
