Jackson’s manufactures kettle-cooked sweet potato chips made only in premium avocado oil and will add two new high-capacity kettles and two additional high-speed packaging lines and seasoning systems. The expansion will allow the company to produce four different products simultaneously.
The addition of the two kettle lines means the company will process nearly one million pounds of heirloom Beauregard and Covington sweet potatoes per week at the facility. The Jackson’s plant opened less than two years ago, and according to the company, it is believed to be the first of its kind dedicated to only making sweet potato kettle chips cooked in premium oils.
In June 2023, Jackson’s added a second full-time production shift and added overtime as well in order to meet customer demand. The expansion began in late August and is scheduled to be completed in early November, the company said.
