Soft and stretchy, enrobing caramel is just right for cookies, granola bars and candy bars, especially as a chewy sandwich layer. It can be used as a vehicle for binding nuts, cereals, grains and coconut to the outside of cookies or snack bars. With additional processing, enrobing caramel may be used as a stretchy center for candy. Possessing a light, golden color, this caramel comes in three formula options, offering a wide variety of functional benefits, and it can be fortified. The ingredient has a shelf life of nine months at 65-75°F, with a maximum relative humidity of 60 percent. It’s certified kosher.
