Wellness Foods New Ingredient Profiles: November/December 2007

Dec. 10, 2007
November/December's nutraceutical ingredient profiles include a resistant starch, a syrup and cocoa replacer, a super antioxidant and a probiotic chocolate.

Simply Irresistible

Tate & Lyle Americas Inc. launches its Promitor brand of resistant starch. Resistant starch is a starch that “resists” digestion and acts as a dietary fiber, and a prebiotic that promotes gut health. Starch is a glucose polymer that provides tubers, beans and whole grains   healthy staples throughout the world   with their energy punch. Some starch naturally escapes starch-digesting enzymes, and makes it's to the large intestines, where it provides food for gut-friendly bacteria as well as a source of energy to colon cells. Resistant starch is grabbing the attention of manufacturers of foods targeting wellness. As the first ingredient to be marketed under Tate & Lyle’s new Promitor line of dietary fibers, Promitor resistant starch will help manufacturers add more fiber to baked products and snacks (including cereal, crackers, cookies, bread and pasta) or other food products, with no impact on taste or texture.

INGREDIENT PROFILES:

Black and White

Briess Malt and Ingredient Co. introduces BriesSweet White Sorghum Syrup and Organic Black Cocoa Replacer, developed to help formulators solve color development challenges. Both ingredients are all-natural, non-GMO, organic and kosher-certified. BriesSweet is a gluten-free malt extract substitute offering a solution to the challenge of browning cereals, crackers, snack foods, particulates, baked goods and other foods formulated to be gluten-free. It differs from other sorghum syrups because it is produced from the starchy heads of the grain, not the cane. It is a nutritive sweetener with the same reducing sugars and amino acids as malt extract and possesses other characteristics similar to malt extract such as moderate- to long-lasting sweetness, humectance, medium viscosity and improved fermentability. The Cocoa Replacer is a whole-grain flour with the color and flavor characteristics of black cocoa. With intense black color, it is an all-natural ingredient milled from pure roasted barley. It can be used as a 1:1 replacement for black cocoa in chocolate sandwich- and wafer-style cookies, breakfast pastries and other foods. It also functions as a whole grain colorant.

New Superfruit

Natreon Inc. introduces Capros as an ingredient for functional beverages. Derived from the Indian gooseberry (Phyllanthus emblica), capros has an antioxidant ORAC value nearly twice that of açai and more than ten times that of pomegranates, cranberries or blueberries. The superior antioxidant properties of Capros are found in its composition: Capros is comprised mainly of low molecular weight hydrolysable tannins, which makes up over 60 percent of the ingredient. The consistency, composition and concentration of the tannins are the key reasons Capros can function as a significant antioxidant source.

Probiotic Chocolate

Barry Callebaut launches the first probiotic chocolate on industrial scale, in partnership with Toulouse, France-based Lallemand Group. The chocolate is enriched with probiotic microorganisms that help to restore the balance of the intestinal flora. It’s capable of resisting normal chocolate production processes and has a long shelf life. Studies also confirm that chocolate is a superior carrier for the intestinal delivery of probiotics, ensuring the survival of up to four times as many beneficial probiotic bacteria as those contained in milk-based substrates. Special production process guarantees highly effective probiotic viability in the end product   just 13.5g of probiotic chocolate per day is sufficient to ensure the balance of the intestinal microflora. Best of all, the probiotics have absolutely no influence on the taste, texture and mouthfeel of Callebaut’s acclaimed chocolate.

Power Play

Danisco USA Inc.’s BetaPower Natural Betaine is a natural trimethylglycine compound shown in clinical studies to improve athletic performance, especially enhancing strength and power. It can also protect against the effects of dehydration. The natural betaine in BetaPower is extracted from the molasses of sugar beets. On a cellular level, betaine acts as an organic osmolyte that supports cell metabolism and plays a key role in protecting cells against dehydration and stress-related water loss. Research also indicates betaine, along with other nutrients, helps to reduce potentially toxic levels of homocysteine, a naturally occurring amino acid that can be harmful to blood vessels thereby contributing to the development of heart disease, stroke, and peripheral vascular disease. BetaPower is highly compatible with enzyme function and stabilizes cellular metabolic function under various kinds of stress such as overheating. BetaPower Natural Betaine is highly soluble and stable, so it can be used in a wide variety of product formulations developed for sports performance/enhancement, nutrition and hydration. Naturally-derived BetaPower is readily bio-available, particularly when added to beverages. Other potential applications include: gels, sports bars, nutrition bars, drink mixes and snack products.
