Deli Star Corp., a processor of deli-counter and other proteins, has announced plans to build a new plant to replace one lost to a fire.

The 104,080-square-foot plant in St. Louis will replace a facility in Fayetteville, Ill., that was destroyed in a fire on Jan. 11. It will employ about 500 workers to produce deli meats and salads, sous-vide meats and other protein-based foodservice products. Construction is scheduled to begin early next year.

The new plant site is about 30 miles away from the Fayetteville one. It’s also only about two miles from Deli Star’s R&D center, which “will allow Deli Star to easily service customers from ideation to scale-up and through to production,” according to a company press release quoted by KTVI-TV.
