In a move guaranteed to shake up “freedom fries” in their country of origin, one of France’s top chefs, Olivier Pichot, jumped from the Michelin track of haute cuisine to become head chef and “creator of flavors” for McDonald’s European Food Studio food development group, based in Paris.While the French are crying treason and sharpening the guillotine, continued strong sales for this quintessential “American in Paris” prove the French bark is worse than its bite. In interviews with the press, Pichot says he sees his move as a way to make a global difference in food that can’t be made cooking for a select clientele of upper-crust epicures.
