What Will People Eat in 2018?

Keynote speaker John Roulac of Nutiva will take attendees into the food world of the near future.

John Roulac, founder and CEO of Nutiva Inc., wants to transport you into the future. “It’s 2018: What’s on Trend in the Food Landscape?” is the title of his keynote address at the upcoming Food Leaders Summit, April 27-29 in Chicago.

"It will provide greater insight into the increasingly powerful trend of people choosing their foods with a much more careful eye to the meanings and consequences of their choices," he explains.

"I think it’s important to remember that the way we produce our food makes a huge difference — not only in our personal health and the well-being of our families and communities, but in so many other areas of our lives: politics, climate change, our soils and oceans, and the threat of species extinction."

"Revolutionizing the way the world eats," is Nutiva's tagline. The company has been at the forefront of changing eating patterns since it was founded in 1999. At the time, bringing to market hemp, coconut, chia and red palm oil products were thought to be "out there," but now they're being embraced by more and more shoppers … and big food companies.

And Nutiva is not done yet. "We continue to travel to remote regions of the world to sustainably source the next undiscovered superfoods," he says.

Roulac is billed as "a vocal challenger of the industrial food system [and] a strong advocate for hemp agriculture, GMO labeling, organic farming and healthy food for all." As such, it will be interesting to see how his talk compares to that of our other keynote speaker, Vance Crowe, the 33-year-old director of millennial engagement at Monsanto Corp.

Roulac says the biggest challenge facing the food industry is "closing the gap between what today’s shoppers are looking for (e.g., organic and non-GMO foods without preservatives, dyes or hormones) and what industrial agriculture is currently producing."

So, there should be a lot of spirited discussion at the Food Leaders Summit. Roulac and Crowe are among 35 or so speakers among the 27 sessions at the 2½-day conference. Other session titles include Building consumer trust throughout the supply chain; Future innovation in product development for the critical consumer; and Facts, trust and transparency.
