Lifeway Foods Inc. announced that it will increase cheese production and make investments in technology to cut production time of the product by more than half, according to a release distributed by the manufacturer of kefir and fermented probiotic products.
New automation and strategies to improve efficiency are needed, the company says, to meet future demand and potential growth in support of a series of new marketing and advertising initiatives to introduce Lifeway Farmer Cheese to new audiences. This push is coming in response to cottage cheese trending on social media in recipes — Lifeway considers its Farmer Cheese product to be a time-saving alternative.
Lifeway Farmer Cheese is similar in flavor to cottage cheese, spreads like cream cheese and delivers protein and probiotics to consumers. It is up to 99% lactose-free, gluten-free and contains no added salt — so it is lower in sodium than many cottage cheeses.
The company adds that aficionados of Eastern European style cheeses may be familiar with farmer cheese, also known as Twaróg, a variety of quark.
