Fibersol-2L, a new, liquid version of Fibersol, can play a role in reduced-sugar formulations because it improves mouthfeel and flavor profiles of products that use zero-calorie sweeteners. Non-nutritive sweeteners can linger or create an aftertaste that a low level of Fibersol-2L can make less noticeable. It can deliver the same level of fiber quality as Fibersol-2, with 90 percent soluble dietary fiber. But in a liquid form, it makes bulk handling and incorporation easier and opens up new applications.
